After many request I have decided to upload a few recipes a week, but I will have to admit, I love to cook but spend as little time in the kitchen as possible, and I refuse to cook in a dirty, cluttered kitchen, so the kids know to keep it clean or they are eating sandwhiches, again! I have worked at a 9 to 5 job most of my kids life, it seems and on those rare occasions I made it beyond the crock pot or the oven the kids would say, "hey! mom cooked tonight!" I never got credit for the yummy things the crock pot or the oven put out because I was not in the kitchen long enough to get said credit, I guess. Philosphy on recipes, they were made to modify, and substitute. After all there are things I don't buy, and things the kids will not eat, well if they know they are in there. I am the master of disguse, they ate more squash one year, then than have ever scooped up on thier plates that they knew they were eating. I loved it! Please feel free to share these recipes with friends and family and I will put a link in for my favorite online recipe guide. Funny thing about the recipe online place, I called my mom for a dessert she made us all the time, her response was, go to allrecipe.com," I was floored when I found her recipe there posted by someone else.
In this health oriented world we live in, I thought that grandma was just pulling my leg about food all those years I was growing up, when McDonalds was just becoming who they are today. I would live for my Big Mac and those yummy fries, until I hit my 30's and my body said NO more Big Macs for you. My Gallbladder was going south and my diabetic tendacies were lerking around the corner, I decided that Fast Food was only slow death. I started making a few changes at a time, in 1.5 years I dropped over 100 pounds, my surgar levels were staying good, and I still my gall bladder. Now I tell everyone I just wanted to be a sexy gammaw! But the grands just got a healthy Gammaw!
When I list oil, butter, or salt I mean Olive Oil, as over time it will reduce the bad that regular oil causes, if I steer away from Olive Oil I use Vegtable or Cannola, peanut oils for that southern fry. Butter I mean Butter, the generic brand unsalted, not margerine, as it has all the bad stuff! And Salt, I prefere Sea Salt, but will use Iodized Sea Salt where you really want that salty flavor. And the trick to any diet, drink atleast 8, 8 ounce glasses a day of Water! Put lemon in it, and drink through a straw it goes down easier and faster! Now I seldom drink any soft drink. The stuff they put in diet drinks will kill you too! Sugar I use sugar in the raw for baking, and cooking.
Egg Plant ParmeseanServes 12 3 to 4 Egg Plants Peeled 3 Eggs slightly beaten with Water 4 Cups of Itialian Bread Crumbs or crushed Herbed Dressing Dip thinly sliced Egg Plants into to egg mix and then bread crumbs, lay on a baking sheet and bake for 15 minutes.
I used 3 Cans of 4 cheese sauce, for my sauce. You can add ground meat if you wish just drain and rinse your hamburger meat if used.
Clean and thinly slice other fresh veggies of choice, I use squash and zuchinni, Onions, Bell Peppers, and tomato slices in mine. I slice just enough to cover one layer.
In a deep baking dish put down a layer of the sauce, then Egg Plant slices, then I make my veggie layer here, add cheese mixture, then top with sauce. Then I repeat with Egg Plant, Cheese, and then Sauce until I have used all the egg plant. About 3 layers on average, I take my remaining sauce and top with a very light sprinkle of Parmesean, and add more when I remove foil. When using foil try not get it down on the sauce keep it raised above, as acid in tomatoes will dissolve the foil. Bake about 30 to 45 minutes and remove foil, top again with Parmesean, and let it slightly brown then remove from Oven, allow to sit for atleast 15 minutes before serving.
Serve with a salad and Olive oil Garlic bread. | Olive Oil Garlic Bread1 whole clove of Garlic, peeled and 8 oz of Olive oil, slowly allow to cook for 15 minutes, until cloves are soft and can be mashed with fork. Mash the garlic into the oil, light spread over French bread slices, and sprinkle with Parmesean, Broil until lightly brown and Serve! As my youngest son says," this is yummo for the tummo!"
